I tried...How many muffins does this recipe yield? <br /><br />I tried once a recipe with buttermilk and didn't like the texture, perhaps it was my fault, the muffin was sticking to the paper cups and most of the outer layer stayed on the paper - never happened to me when I use milk for example... They were quit...Thanks for your comments, ask away! They were quite heavy muffins - but moist with it, largely due to the rhubarb. The crumble topping added a welcome crunch. I would perhaps use slightly less topping another time though, there was a lot. The paper cups are genius - sooo simple. Just cut squares of baking parchment (these were about 10cm x 10cm), crumple up so the paper is more malleable, pop into the muffin tin one at a time and plop the mixture in the middle.
